Makes 1 Christmas Tree
180g ALT. Tender Chickenless Pieces
2 x Packs ready to roll pastry (vegan options available)
1 Jar of your favourite cranberry sauce, approx. 200g
Approx. 150g block of brie
1/2tsp – 1tsp Rosemary – fresh or dried
1 x Egg
Why not try adding in any left-over stuffing or vegetables…
also you can swap out the dairy and pastry to vegan alternatives.
Pre-heat the oven to 180c.
Open both ready to roll pastries and roll-out. Place one rolled out pasty sheet on top of the other, and cut both into a basic, triangular Christmas tree shape. Set one of the pastry sheets to one side, and place the other on top of a sheet of greaseproof paper. Keep the off-cuts from both.
With the off-cuts, cut out two star shapes and two trunk shapes, set to one side.
Working with the rolled out pastry on the greaseproof paper, spread the cranberry sauce over the pastry, then cut slices of brie and add an even layer.
Roughly chop the Chickenless Pieces and add an even layer (no need to pre-cook).
Lay the other pastry tree on top.
Make the branches of the tree by cutting even finger widths into the tree on each side and twist each finger, carefully, to keep the filling inside
Apply egg was over the whole tree and scatter some rosemary to your liking and cover with grated Pecorino
Put in the pre-heated oven on a baking tray, and cook for 30-40 minutes (until golden brown and the pastry is cooked)
