Festive Taco-Ho-Ho’s

INGREDIENTS

BEEFLES TACO-HO-HO’S

2 x 160g The Unbelievable ALT. Tender Beefless Pieces
1tsp Garlic powder
1tsp Cumin
1tsp Paprika
Pinch of salt
Pinch of pepper

CRANBERRY SALSA

350g Cranberries
1 Bunch Spring Onions
1 Jalapeno Pepper
2 Limes, Juiced
75g White Sugar
Pinch of salt and pepper

SPROUT SLAW

250g Brussel Sprouts, Trimmed and Thinly Sliced
1 Medium Red Onion, Chopped
2 Peeled and Grated Carrots
1 tsp Cumin powder or Seeds
100g Greek style Yoghurt
50g Mayonnaise
1 tbsp. Wholegrain Mustard
½ Lemon, Juiced and Zest
Handful of Fresh Chopped Chives
Handful of Fresh Chopped Parsley

METHOD

    Follow Beefless pieces back of pack cooking instructions

    Once cooked, season as above and fry on for a further 2-3 mins

  • CRANBERRY SALSA

    Combine all ingredients in the bowl of a food processor and chop to medium consistency

  • 2

    Set aside until serving

  • SPROUT SLAW

  • 1

    Combine the Sprouts, Onion, Carrots and Cumin and mix well

  • 2

    Put the Yoghurt, Mayonnaise, Mustard, Lemon juice and Zest into a smaller bowl and mix well

  • 3

    Tip the Yoghurt mix into the Vegetable mix and stir well until fully combined

  • 4

    Stir through the chopped Chives and Parsley
