Fab Chickenless Fajitas


400g The Unbelievable ALT. Tender Chickenless Pieces
Large tortilla wraps
2 tbsp Rapeseed or vegetable oil
2 Red Onions, peeled and cut into thin wedges
1 Red pepper, sliced
1 Yellow pepper, sliced
2 tbsp Fajita spice mix
Coriander, chopped
Grated cheddar cheese
½ Avocado, diced
1 Lime
4 tbsp Red wine vinegar
Salt & pepper


Tomato salsa


¼ Onion, finely diced
1 Tomato, chopped
1 tbsp Tinned chopped tomatoes
Extra virgin olive oil
Juice of half a lime

    Mix salsa ingredients

    Chop the avo and squeeze over ½ a lime

    Souse the red onions in a pan with the vinegar and season with salt and sugar. Heat through to speed up the process

    Cook The Unbelievable ALT. Tender Chickenless Pieces as per on pack instructions and set aside

    Fry the peppers for 2-3 mins in the oil until coloured. Add the fajita seasoning, soused onions and cooked The Unbelievable ALT. Tender Chickenless Pieces. Add a few tablespoons of water to allow the fajita spice to mix and coat everything and heat through

    Heat up the wraps
