Chickenless Pot Pie

INGREDIENTS

400g The Unbelievable ALT. Tender Chickenless Pieces
Olive or rapeseed oil
25g Porchini mushrooms, chopped and just covered with hot water
250g Button mushrooms
1 tbsp Fresh thyme chopped
1 tbsp Curly parsley, chopped
2 Leeks, chopped
1 large glass white wine
1 Ready rolled puff pastry
1 Egg yolk for egg wash
Salt & pepper

White sauce

50g Butter
50g Plain flour
400ml Milk

METHOD

    Make white sauce with béchamel method. Add the white wine and the chopped porchini (including the soaking liquor). Cook out until thick and smooth consistency

    Cook The Unbelievable ALT. Tender Chickenless Pieces as per on pack instructions and set aside

  • 3

    Sauté the leeks in oil for 2 mins, then add the button mushrooms and cook for a further 4 mins

    Mix the The Unbelievable ALT. Tender Chickenless Pieces, leeks and mushrooms through the white sauce. Add the chopped herbs and pour into a pie dish

  • 5

    Top with pastry and egg wash

  • 6

    Cook in the oven for 30-35 mins at 180°C
